By now you've read the title of this newsletter and also seen a change in your mailbox. You might have observed a change in the sender's name today. You must be wondering "...but when did I subscribe to this?" Well, let me address all your questions first. This is going to be a long newsletter. a) Like I mentioned in my previous post, I have taken a break from my freelancing business. Likewise I will take a break from talking about business and entrepreneurship for some time. c) I'm a vegetarian. So my recipes and cooking-related posts will not include meat. However, I might use dairy products like cheese, butter, cottage cheese (paneer), and milk. But I will also include vegan alternatives for you.

Roti Pizza:
What is a roti?
Roti is an Indian flatbread made with whole-wheat flour. It is vegan if you do not apply ghee/clarified butter.
What is a Roti Pizza?
Well, usually rotis are eaten with a side-dish/ curry or some form of gravy or stir-fried veggies, onion, sugar, etc. However, to make it slightly interesting and appealing for kids (and adults of course!), we'll give our plain roti a twist by adding pizza sauce, veggies and cheese on top.
Ingredients required:
For rotis:
Whole wheat flour
Salt
Water
Ghee (clarified butter) or oil (for vegans).
For pizza:
Onions
Tomatoes
Capricum/bell peppers
Mushrooms
Paneer/ cottage cheese/ Tofu
Zucchini
Or any vegetable of your choice
Cheese
Pizza sauce/ Tomato ketchup
Oregano
Chilly flakes
Note:
a) I haven't mentioned the number of vegetables above. You can add or avoid depending on your preference and choice.
b) You can either cut them into big squares or julianne them. You can chop them however you like. My recipes are 100% customizable. So you can go ahead and customize the entire dish as per your requirements and taste buds.
Steps:
1. Knead the dough well and keep it aside for 15-30 minutes before you start rolling the rotis.
2. Make sure the rotis are slightly thicker than usual.
3. Heat a tawa/skillet and cook these rotis on one side.
4. Flip the roti and spread some pizza sauce/ketchup on the cooked side. Place these chopped veggies and grate some cheese on top.
5. Close the lid and cook it on low flame/ until the cheese melts.
6. Serve it hot with oregano and chilli flakes
Alternatives:
1. You can use vegan cheese instead of regular cheese.
2. You can use tofu instead of paneer/ cottage cheese.
3. Pizza sauce can be replaced with regular ketchup or mayonnaise.
4. You can use corn, broccoli, olives, jalapeno, etc. if you like.
5. If you are vegan, use oil instead of ghee/clarified butter.
6. This can be made with jowar/bajra/ragi rotis as well.
7. You can add or avoid any vegetables of your choice.
8. If you have regular cheese slices, you can randomly cut them into pieces and place them on top of your pizza.
9. You can add cheese spread to the base if you like.
